Bones Hold'em
A well-known game, rolled instead of dealt. Experience a shift of perception when mathematics meets expectations.
Each player gets two secret hole dice; five shared dice come out across four betting rounds. Make your best five-die hand out of seven and take the pot.
Every hand you play gets logged by shape. The stats screen shows your observed frequencies against the true mathematical odds. Over a hundred hands, the gap closes. That's the point.
Street play (optional house rules). This is a field game, played in a rough environment that allows manipulation. Blow on a die to nudge it, stomp the ground to rattle the pot, or knock the box before the next die drops. Flavor you can toggle off for straight game.

The game idea came up during a conversation with @ryanmorholt about a different dice game. Probably the in-game choices make more sense if you imagine it is played in some post-apocalyptic context by people who forgot how to calculate probability.
